Quality control
The Quality control it is at the heart of all the company's production processes, from the arrival of the milk to the finished product, including the product transformation stages.
All tankers arriving at the company, before being authorised for unloading, are subjected to Analysis of milk to check for the absence of inhibitory substances. Chemical-physical analyses are also carried out (pH, humidity, fat, etc..), both on the finished product and during the various stages of processing, in parallel with microbiological controls, also carried out by an accredited external laboratory.
The operators are constantly trained on hygiene and behavioural aspects, and their conditions are assiduously monitored to prevent possible external contamination.
Supply chain and traceability
All of our production is made exclusively with Sicilian milk. The farms that supply us with milk are located in the Belice Valley area, straddling the provinces of Trapani, Agrigento, and Palermo.
A strong focus on health and safety issues, and on the correct application of traceability, has led the company to Implement software to manage production from milk collection to finished product packaging. Every day, data relating to milk discharge, such as the farm of origin and quantity, are tracked and recorded. A traceability system is applied to each processing batch, which includes all ingredients entering production and their respective lots. Furthermore, all primary packaging used in the finished product's packaging is tracked.
Thanks to these and other procedures, we are able to trace a finished product back to the ingredients and packaging used (milk, salt, rennet, black pepper, lactic ferments, packaging film, cheese molds…) and their origin.
